About Spanakorizo

Spanakorizo (σπανακόρυζο) is one of Greece's most beloved comfort foods, combining the earthy goodness of spinach with the creamy texture of rice in a simple yet incredibly satisfying one-pot meal. This traditional dish has been nourishing Greek families for generations and represents the essence of Greek home cooking.

Historical Origins

The origins of Spanakorizo can be traced back to the Byzantine era, when rice cultivation was introduced to Greece. The combination of spinach and rice became popular among Greek farmers and rural communities, who appreciated its simplicity and nutritional value. The dish evolved over centuries, incorporating local herbs and the abundant wild spinach that grows throughout the Greek countryside.

Cultural Significance

In Greek culture, Spanakorizo represents the philosophy of "meraki" (μεράκι) - putting love and soul into simple, everyday cooking. This dish is often prepared during Lent when meat is traditionally avoided, but it's enjoyed year-round as a comforting, nutritious meal. The addition of fresh dill and lemon juice gives it the characteristic Greek flavor that makes it so distinctive.

Why This Dish Matters

Spanakorizo is a perfect example of how Greek cuisine transforms simple ingredients into extraordinary flavors. The slow cooking process allows the rice to absorb the spinach's natural juices, creating a creamy, risotto-like consistency. This dish demonstrates the Greek approach to vegetarian cooking: using fresh, seasonal ingredients and traditional techniques to create satisfying, flavorful meals.

Ingredients

For the Rice

  • 150g short-grain rice (milk rice or risotto rice)
  • 400ml hot water
  • 3 tbsp olive oil

For the Vegetables

  • 500g fresh spinach (or 400g frozen spinach)
  • 1 medium onion, finely diced
  • 1 spring onion, sliced into thin rings (optional but traditional)
  • 1 bunch fresh dill, finely chopped (or 1-2 tsp dried dill)

For Seasoning

  • 1 tsp salt
  • Black pepper to taste
  • 1 lemon, juiced
  • Extra olive oil for drizzling

Optional for Serving

  • Feta cheese
  • White bread or pita
  • Greek yogurt (optional)
  • Pinch of nutmeg (optional)

Instructions

Step 1: Preparation

  1. Wash spinach thoroughly and roughly chop (if using frozen: thaw and drain)
  2. Finely dice the onion
  3. Slice spring onion into thin rings
  4. Finely chop the dill
  5. Squeeze the lemon

Step 2: Sauté the Onions

  1. Heat 3 tbsp olive oil in a pot
  2. Sauté onion (and spring onion if using) until translucent (about 3-4 minutes)

Step 3: Add Spinat and Rice

  1. Add spinach to the pot and let it wilt (in batches if necessary)
  2. Add 150g rice and stir for 1 minute

Step 4: Season and Cook

  1. Add 1 tsp salt and some pepper
  2. Add 1-2 tbsp chopped dill
  3. Pour in about 400ml hot water (rice should be well covered)
  4. Bring to a boil, then cover and simmer on medium heat for 20-25 minutes
  5. Stir occasionally and add water if needed
  6. The consistency should be creamy, almost like risotto

Step 5: Finish and Serve

  1. Season generously with lemon juice (important! This gives the typical taste)
  2. Drizzle with more olive oil
  3. Serve hot, warm, or cold
  4. Top with feta cheese if desired
  5. Serve with white bread or pita

Tips

  • Fresh vs frozen spinach: Fresh spinach gives better texture, but frozen works well too
  • Rice type: Short-grain rice works best for the creamy consistency
  • Lemon juice: Don't skip this - it's essential for the authentic Greek flavor
  • Consistency: Should be creamy like risotto, not dry or soupy
  • Stirring: Stir occasionally to prevent sticking, but don't over-stir
  • Water: Add more hot water if needed during cooking

Variations

  • Add protein: Top with crumbled feta or serve with Greek yogurt
  • Extra herbs: Add fresh mint or parsley
  • Spicy version: Add a pinch of red pepper flakes
  • Creamy version: Stir in a spoonful of Greek yogurt at the end
  • Nutty version: Add toasted pine nuts or walnuts
